On days when you want to have something simple, and a flavourful dish that is easy to make, Paneer Ghee Roast is the perfect recipe. You can have this Mangalorean delicacy as an appetiser or as a side for your dosa, paratha, or roti.

The dish is the vegetarian version of the chicken ghee roast that Mangalore is famous for. Like the original chicken recipe, this paneer version involves liberal use of spices that pack in the flavour and deliciousness.

Preparation time of Paneer Ghee Roast: 25 minutes

Ingredients needed for Paneer Ghee Roast

  • Paneer (450g)
  • Onions, tomatoes (finely diced)
  • Green chillies (chopped)
  • Curry leaves
  • Roasted spices paste (dry roast byadgi chilli, fenugreek seeds, mustard seeds, pepper, curry leaves, cumin seeds, and tamarind for about 3 minutes and grind them to make a smooth paste)
  • Red chilli powder
  • Coriander 

Method for making Paneer Ghee Roast

  • Heat 150ml of ghee in a pan, and temper curry leaves, green chillies and onions.
  • As the onions start to turn brown, add tomatoes and the roasted spices paste. Add some water to dilute the paste, and cook the masala for about 10 minutes to form the curry base.
  • Add the paneer (dice the paneer in medium-sized cubes and soak them in water for about 30 minutes in water).
  • Add red chilli powder, and stir the paneer. Let the paneer combine well with the masala.
  • Let the paneer cook for a few minutes.
  • Transfer the dish to a plate, garnish with some coriander and savour the delicious paneer ghee roast!

About Paneer Ghee Roast 

The original ghee roast recipe made with chicken is said to have its origin in Kundapur, a small village near Mangalore. Later the dish was adapted into a veg roast recipe using paneer. If you like to have vegetables in your daily diet, apart from paneer, you can also add vegetables like carrots, cauliflower and beans to the dish. The vegetables make the dish wholesome and give it a unique flavour.
